ZUCCHINI SOUP WITH COCONUT MILK AND CURRY

It’s nice&easy like everything I do. The idea is not to spend hours in the kitchen preparing my everyday meals . Life has many other things to offer me. I cook as simple as possible keeping the flavors, colors, qualities of the food, and my pleasure.

So, for today zucchini soup with curry&coconut milk. It’s a spicy, creamy soup, ready in 15 minutes.

Ingredients for 2 portions:

1 zucchini

1 big onion

10 tbs. of coconut milk

1/2 tbs. of curry powder

1/2 lemon

cayenne pepper

5 green onions

Cut zucchini and onion in aprox. 4 cm slices, put them in a pot. Add water to almost cover the vegetables, put salt and let them boil for 10 minutes (zucchini should be soft but still green). Take the pot from the fire, blend well the vegetables and the water, add cocnut milk, curry powder, cayenne pepper, lemon. The soup it’s ready!

Sugestion!

Near zucchini soup are perfectly matched few bruschettas with salty cheese and green onions.

RAW, GLUTEN-FREE CRACKERS

This is the first Lola Food Factory product, ready to go in the world. I’ve meditated, asking how to materialize my intention, which is the best culinary expression of love I feel for LIFE, to share it with people.

Dear God

How I can make people to feel they are kissed directly on heart by YOU?

The answer was –  MAKE BREAD, put your love, stillness and joy in this simple thing! My heart beat happy, letting  me know that it’s a true answer.

One of the most ancient, symbolic aliment, common maybe to all cultures of the planet is BREAD. Whether it is leavened  or unleavened, made into loaves or cakes, baked, steamed, or fried in oil, bread is universal. It has exceptional nutritional value, and as the only nearly perfect product for human nourishment, can be consumed by itself.

So, bread it is! Well…crackers. I love crunchy stuffs and I could preserve better the qualities of the grains not baking but dehydrating them.

The cereal(pseudocereal in fact) I decided to use is buckwheat. Gluten-free flour!!!

Food scientists have discovered that buckwheat is a rich source of what is called “biologically available protein.” This means that buckwheat has a well-balanced assortment of essential and non-essential amino acids, the building blocks of protein. It is considered a superior source of protein when compared to wheat, rice and even millet. Like citrus fruits, buckwheat is a rich source of rutin, a powerful flavonoid antioxidant. It’s also a good source of Vitamin E, another powerful antioxidant.

What you see in the pictures are spicy buckwheat crackers with curry&poppy seeds.

A resposta foi – FAZ PÃO, põe o teu amor, a tua calma e a tua alegria nesta coisa tão simples! O meu coração bateu de contentamento, provando que esta era a resposta.

Um dos mais antigos, simbólicos alimentos, provavelmente comum a todas as culturas do planeta é o PÃO. Quer seja levedado ou não, em forma de carcaça ou bolo, cozido ou frito em óleo, o pão é universal. Tem valor nutricional excepcional e sendo uma das mais perfeitas formas de nutrição humana, pode ser consumido sem acompanhamento.

Portanto, pão será! Bem… bolachas. Adoro coisas crocantes e poderei preservar melhor as qualidades dos grãos não cozendo mas desidratando. O cereal (pseudo-cereal, de facto) que decidi usar é o trigo-sarraceno. Farinha sem Gluten!!!

Cientistas da comida descobriram que o trigo-sarraceno é uma fonte rica naquilo que é chamado “proteína biologicamente acessível”. Significa que o trigo-sarraceno tem uma bem equilibrada variedade de aminoácido essenciais e não essenciais, os blocos de construção das proteínas. É Considerada uma fonte superior de proteína quando em comparação com o arroz, trigo e mesmo painço. Tal como as frutas cítricas, o trigo-sarraceno é uma rica fonte de rutina, um antioxidante flavonóide poderoso. É também uma boa fonte de vitamina E, outro poderoso antioxidante.

I prefer markets instead of supermarkets. In the market I fell alive, full of energy, closer to nature, to people, I feel the abundance, the juiciness of life. It’s a place where you can go and pick the best of everything.

Yes, pick the best of every moment you live. All the moments are yours, and only you choose how to use them! Be smart, please, be smart and have some fun!

When you recognize richness in simple, humble, common things, they magically show back to you how rich you are. Richness is not about money, it is about feeling fulfilled. Try going to a market! Look at the colors and textures, touch, smell, be 100% there with all your senses! Feel the generosity of Mother Earth!

Fill up your bags with fresh, shiny vegetables and fruits, take this new treasure home with you and create, play with it like a child. When you want to play, the Universe will come to play with you revealing an endless fountain of inspiration.

So, go to the market and maybe you will find more than you were expecting…

BAKED POTATOES WITH FETA CHEESE CREAM

Let’s keep it simple! Life, I mean, and food also. This is the way to feel all the flavours it has.

Today a magic dish for lunch or dinner, perfect to put in the middle of the table and share with your friends, or as a solitary pleasure just for your own.

Ingredients:

potatoes

feta cheese

green onion

yogurt

cayenne pepper

salt

rosemary

Wash well the potatoes because they should keep their skin on(the vitamins and all good nutrients are there), cut them in halves, spinkle over some salt and dried rosemary and put them in preheated 200C oven.

Till they will become golden-crispy(aprox. 40 min) you have time to prepare the cheese cream.

Smash well feta cheese, mixing it with yogurt till will be really creamy, add cayenne pepper, and choped green onion.

Enjoy the amazing rosemary scent in your kitchen, set the table as nice as you can, even if you are home alone, take the hot potatoes from the oven, put some cream on top and be happy.

Simple, isn’t it?

SUGARLESS LIFE BUT NOT BITTER

Sugar is omnipresent in our food. Read some labels in the supermarket, but not in the sweets area. Go to cans, sausages, pickles, bread, sauces, yogurts…Even smocked salmon has  sugar.

Why, why, why? Why is this sweet poison everywhere?

I don’t have the answer, but I’m aware that is too much. I can not change the world, but I can have better options for myself. One year ago I’ve stopped eating sugar. For few months at all, not even fruits, using stevia as sweetener.

After cleansing, rebalancing the body I still keep out from my diet all types of processed food, refined sugars or artificial sweeteners.

Where I was thinking I will find a desert I discovered a charmed garden. The key was to not focus on what I’ve lost, but on the abundance of what I can have.

So, life is still sweet and lovely

O açúcar está presente em quase toda a nossa comida.

Lê algumas etiquetas no supermercado, mas não nas prateleiras de doces. Vai até aos corredores dos enlatados, salsichas, pickles, do pão, dos molhos, dos iogurtes… lê os rótulos e surpreende-te! Até o salmão fumado tem açúcar…

Porquê, porquê, porquê? Por que razão este veneno aparece em todo o lado?

Não tenho a resposta, mas tenho a consciência de que existe açúcar na comida. Não posso mudar o mundo, mas posso escolher alternativas melhores para o meu corpo. Há um ano parei de consumir alimentos açucarados. Durante alguns meses não ingeri nada com açúcar, nem frutas. Para adoçar usei apenas stevia.

Depois de reequilibrar o corpo continuo a não consumir alimentos processados, açúcar refinado ou adoçantes artificiais.

Onde pensava que encontraria um deserto, encontrei um encantador jardim. A chave para esta descoberta foi concentrar-me não no que perdi mas na abundância do que posso ter.

First recipe

Raw Apple Tart

Ingredients:

3 apples

4 slices of pineapple

5-6 strawberries

5 spoons of psyllium husk*

few drops of stevia (optional)

*is a great source of water-soluble fiber that expands to several times its original size when mixed with water. It quickly transforms from powder form into a gooey substance.

Put pineapple & strawberries  in blender and mix them well. The result should be a pinky-tasty liquid.

Cut the apples in small pieces and put them in a bowl.

Add the pinky liquid plus stevia if you want it sweeter.

Add also psyllium husk mixing all the time.

Put the composition to rest in the refrigerator for 30 minutes, and the cake is ready.

I like it covered with creamed lime&fennel tofu
