CAROB CHOCOLATE

Sweet dream for all the chocolate addicts who cannot have chocolate anymore.

Ingredients:

100 g carob powder

100 g coconut cream bar

2 tbs. Stevia

50 gr. walnuts

orange zest

water

 

 

Put the carob powder in a pot, add water and mix well, until it becomes a soft cream. Warm it on the stove, stirring all the time. Take the pot from the stove, add the coconut cut in very small pieces, mix very well, add Stevia, walnuts and orange zest.

Pour the mix on a cellophane sheet and roll it. Let it cool down, put it in the refrigerator for a few hours and there you have it! Have a sweet, sweet day!

AMAZING, SUGAR FREE ICE CREAM

Great discoveries are made by mistake :)

I wanted to make cream cheese to glaze a cake. I was mixing fresh cheese, bio natural yoghurt, grated lemon zest, strawberries and Stevia. Everything turned liquid. Soooo tasty, but not a cream anymore. What to do, what to do?

What if I freeze it?

Well… if I freeze it, I’ll have an amazing, creamy, sugar-free ice cream.

 

To achieve a smooth texture even if you don’t have an ice cream machine (and I don’t), mix it in a blender again after it is frozen, to smash the ice needles that form.

Ingredients:

200 g cream cheese (Philadelphia type – I found a bio one)

200 g yoghurt

200 g strawberries

2 tbs. liquid Stevia

grated lemon zest

For the sauce I thawed wild berries on the stove and boiled them until their juice became thick. I added Stevia to sweeten it.

Life is lovely and pink!

SWEET POTATOES AND RAW SAUERKRAUT

Ingredients:

1 large sweet potato
salt and cayenne pepper
1 tablespoon of olive oil
dried rosemary

These delicious sweet potato wedges are low in calories and high in vitamins and fiber. They’re also really filling so they’re a great diet food. This recipe makes about 2 portions.

Preheat the oven. Peel the sweet potato and cut it into wedges. In a bowl, toss the wedges, olive oil, salt, pepper and the rosemary. Place the wedges flat on a baking sheet lined with foil, and bake for about 25 minutes or until tender and golden.

They go perfectly with some raw sauerkraut made of fermented vegetables such as cabbage, carrot, radishes. The probiotic bacteria in sauerkraut will help you have a great digestion.

How to make it? Cut a cabbage in small pieces, put it in a blender and mix it well, do the same with 2-3 carrots. After, put them together in a bowl, add see salt and have some fun squeezing everything with your hands until the vegetables let their juice. Put the composition in a jar, press well, cover it with a plate and leave it at room temperature for a few days. Taste it, and when you find it sour enough close the jar with a lid and refrigerate it.

RED BELL-PEPPER SAUCE

It’s silky, tender, lovely. I adore it! You can have it on fresh bread, indian bread, crackers, raw vegetables, grilled tofu, mixed with yogurt, or just on top of your finger.

Ingredients:

2-3 red bell-peppers

1 onion

garlic

5 tbs. olive oil

1/2 lemon

thyme

cayenne pepper

sunflower seeds


Bake, or grill the peppers, take out the burned skin, seeds, etc, rip them in slices and put them in blender mixing till you have a smooth paste.

Put the olive oil in a pan, cut onion and garlic in small, small pieces, add them in the oil (I don’t like them fried so I add a little beat of water too), when they are soft and water is gone add pepper paste & salt. Let the flame  small and cook till the paste is  oily. Add lemon juice, spices,herbs and sunflower seeds.
